Monday, October 12, Columbus Day
Time: Activities throughout the day

Details: Celebrate Columbus Day
It’s all about the sea in our Columbus Day art theme activities in the art studio.
Sensational Story Time: In 1492 Christopher Columbus sailed the sea.  Find out where he lands and what he discovers in his voyage.
Let’s Move: Don’t miss the ship race!  Your child will have fun moving together in teams to navigate their way through a sea of obstacle to find land!

Thursday, October 15: White Cane Safety Day
Time: 10:00a.m. – 3:00p.m.
Specifically for: Children of All Ages
White Cane Safety Day celebrates the independence and ability of people who are visually impaired. Children will learn about white cane safety as well as experience some of the challenges that children with visual impairments experience. Activities and events will give your little ones a whole new appreciation for creative ways to “see” the world when your sight is impaired!

Thursday, October 22: Read for the Record Celebrates Not Norman: A Goldfish Story
Time: All Day
Specifically for: Children of All Ages
Today, people across the country will unite to read the children’s book Not NormanA Goldfish Story, written by Kelly Bennett and illustrated by Noah Z. Jones.    A humorous tale about a child who finds a new friend in an unexpected place.  In support of Jumpstart’s mission to work toward the day every child in America enters kindergarten prepared to succeed, Pretend City will facilitate a variety of activities centered on this amusing story.
·         Creating your own Sensory Fish Tank (after the 11:00 reading)
·         Not so Norman sequencing snack (after the 1:00 reading)
·         Scavenger Hunt for Norman! (after the 3:00 reading)

Friday, October 30: Healthy Halloween
Time: 11:00a.m.
Specifically for: Children of All Ages
With the chance to dress up in costume and stock up on sweets, Halloween is the highlight of the year for many children. But since its high season for candy, it can also be a frustrating time for parents who encourage kids to eat healthy foods and make sweets a limited part of a balanced and nutritious diet. Not to fear, Serving Kids Hope is here! Serving Kids Hope team will join us to share fun activities, tips and tricks to help encourage your children to stay healthy this Halloween!

Little ghouls and boys will have a howling good time at our Halloween Bug Bash! There’s something for every little trick-or-treater – even those of the two legged variety. Come dressed to thrill in our creepy creaky critter city:
-          Music & Movement: Monster Moves – Disco Dracula is ready to dance! These creepy, kooky and totally jammin' tunes will have children of all ages moving and grooving!
-          Symbols in a Second: Spooky Snacks – This year make sure your Halloween is a healthy one. Children will love these adorable, sometimes-scary, no-bake healthy Halloween treats that represent symbols of the season.
-          Sensational Story time: Halloween Bugs – Behind each spooky door lurks a different bug! There's the silly, the spooky, the scary, and everything in between during these story times. No tricks here — only treats!
Creep and crawl your way through the city as you trick-or-treat at each of our exhibit spaces every 2 hours. This party is bound to go off with a scream!  Members Trick or treating 9:45.  General admission Trick or treating time 12:00, 2:00 and 4:00.

Quick & Easy Pasta Salad

This pasta salad is quick, easy and more...

Happy Friday - This is one meal that you can do up or leave as is simply and fill everyone up. Best part, it is SUPER easy to get onto the table fast. 

How to make it:
Boil your favorite pasta any shape any size, shapes and or colors too!

Let it cool.

Now comes the fun part...
* add any yummies you want into it. Peas, chicken, broccoli, cilantro, so many options
* grab your most favorite dressing or make your own!
I used Greek and Italian dressings on this one but I have also used a mayo mix, a fresh lemon and garlic mix and many more. Get creative! !
* mix it up and there you have it! Ready to go. Toss it in the fridge to chill it like I like it or just start eating ;)

Best part - my kiddo helped me make it!

Irvine Park RR Pumpkin Patch Perfection

Best Pumpkin Patch in OC!

It's tradition...

We have some traditions that have been in our family for 3 generations specific to Southern California. 

One of these traditions is visiting a spot where I celebrated my first birthday over 35 years ago, Irvine Park, where the RailRoad is my favorite.

I love that +IrvineParkRailroad . has seasonal events and year round fun for everyone. 

We just spent our first weekend of Fall enjoying some of the best Pumpkin Patch fun that can be locally found!
Face Painting, Hand Paining, Pumpkins everywhere and Cookie decorating
With so much to do for everyone, we never miss this event! 

Our fav's this year:
* Face paint -

That's my girl!
 I loved that the artists were so patient and did a hand paint for my son who is on the spectrum and doesn't do face paint. Thank you!

Not a big fan of facepaint? That's ok - hold out your arm!
* Sweets and Treats - Not only can you Take the Train ride around the park but you can get snacks to treat the kids to some sugar fun while running around. Our favorite is the fresh cotton candy and pop corn - we call it the cotton corn combo and share!

* Pumpkins! So many and in so many different shapes and sizes - you are sure to find one or 10 that you just have to take home with you!

* Panning for Gold - this is a must and we always bring home some gems and dust with our smiles of fun.

* the Hay Maze - you can see the full video on my periscope and also on twitter here - but it was fun for us all to race to the finish!

* Taking home our pumpkin. We chose one out together and packed it up - we can not wait to decorate it and then make something with the yummies on the inside - seeds and pie!?

We Officially Kicked Off Fall with Knott's Spooky Farm!

Knott's Spooky Farm was awesome!

We had such a blast at Spooky Farm this weekend. I totally understand why my parents would tell me that even a few hours with us together somewhere was with it to them.
We had soccer in the morning early, so we rushed over to Knott's right after. With costumes on my babies were ready for their first Spooky Farm ever!

So much to do and see. We entered the park with a treat bag in hand and decided to check out what was on our Spooky Farm Fun Map!

With a Creepy Crawler Cabin and Spooky Hollow Maze my kids were in the Halloween Spirit along with the Knott's staffs creepiest and ghouls! They were so festive but sweet to all of the kids, so that spooky met fun in the most perfect way.

Trick or treat stops for candy, who doesn't love that?! A monster masquerade ball where you could event make a mask!! We love our crafty side.
The whole Peanuts Gang was out to greet us!
So much fun, let's not forget about the rides! My babies loved it so much we even had a few first times! My 3.5yo rode Sidewinder and called it the fast spin train, he loved it so much we rode it 4 times. The Log Ride is tradition, since I was a kid, so to see his face as he went down first was priceless to me. 

The costume contest and dance party in Camp Spooky were super cute and fun for all. We had so much love for the sweet little kids so proud to show off their costumes!

The Kids Top Favs:
* You can Trick Or Treat and Eat the Candy - Yeah well what can ya do!
* You can ride rides too not just do Halloween stuff
* You can go through a Maze like the big kids are doing for Scary Farm but much more tame. 
* You can see some of the Scary Farm decorations and get excited for when you are over 13 - yes that was said by my 8yo!
* Seeing all the Peanuts Gang in their Fall Festive outfits is so cute.
* My family is together and my brother tried new things - My 8yo

Thanks Knott's Berry Farm, we're 3 generations strong visiting now!
Did I mention that most of the regular shows are still going on and the park doesn't close until 5:30. So much time for fall fun!

Head out to these Family Fun Weekends in October and you too can enjoy all this and more for what I think is a super low price for the fun.

Quick, Easy Al Pastor Tacos and Pico

Super easy and very fast, this Al Pastor fresh dinner made at home will be just what seasoning up simple dinner Sunday's needed!

Fresh Al Pastor Tacos - Under 30 Mins!
Season Al Pastor style any meat cut small and thin:
Salt
Pepper
Orange juice
Garlic chopped
Mexican oregano
A pinch of Cumin
Pineapples crushed with a bit of the juice
Onions cut up
Once marinated add to flat top or stove top pan and let cook. As cooking add some chopped fresh green onion.

Add some green onion and jalapeño chili to the burner and let those cook up slowly as well for an added crunch and kick later with the tacos.

Fresh Pico:
Cut up a tomato, half an onion, half a jalapeño and some cilantro. Add salt and pepper to taste. Add a fresh squeezed lime and mix. Chill this pico for taco topping.

As the meat and veggies are done, push them to the side of pan and add in the tortillas! One, two or tree at a time and you can really get fresh tasting tacos from tortilla to meat.
Top with you pico and bam... Al Pastor tacos!

I usually serve with rice too but hey tonight was time limited and this was yummy enough!
